What’s a bonbon anyway?
In Europe, a bonbon is a sweet; the simplest form of bonbon is essentially sugar-coated almonds. In the modern era, bonbons have evolved to be any confection with a fondant center, often with fruit or nuts.
Bonbon is also the term used in French and German for sweetness.

Cooling the sugar paste from a 140 degree Celsius cooker is still done by hand that requires special knowledge preventing the introduction of air into the paste. Once flavors are mixed, the paste is cooled on a special table, and at the right consistency they are pressed into shape.
Lamelling is a process of blending the praline paste to the beaten sugar paste. Laying the two very thin pastes together requires special know-how to blend them perfectly. The very crunchy quality depends on how well this process is done. Barnier produces one of the finest lamelled candies worldwide.
